      It seems the larger locals who depend on traditional styles (and consistent labels) cannot keep pace with changing drinker tastes / fads; e.g., it’s IPAs and fresh hops, now it’s barrel aged, now it’s sour, now it’s … . The larger one is, the harder it is to pivot to new styles with sufficient volume to cover overhead. The really small ones cannot generate enough volume for profit regardless how much people love their beers. My fear is that big money will be required to be successful, and the true craft will be replaced by industrial production. That is a common movie unfortunately.
